Where it started
BORN FROM A LOVE OF THE SOUTHWEST
Comal Taco Co. started with a simple obsession: the food of the American Southwest. The smoky green chiles of New Mexico. The flour tortillas of Sonora. The bold, fire-driven flavors that define the region.
We grew up eating this food — at roadside stands, family kitchens, and late-night taquerias. When we landed in Charlotte, we couldn't find it. So we built it.
Why a comal
WHAT THE COMAL MEANS TO US
A comal is a flat griddle — the most essential tool in Southwest and Mexican cooking. It's where tortillas get their char, where cheese crisps get their crunch, where everything comes together over direct heat.
It's not fancy. It's not complicated. It's just fire, iron, and intention. That's the philosophy behind everything we make.

OPTIMIST HALL IS HOME
We set up at Optimist Hall because it felt right — a community of independent makers, builders, and food people doing things their own way. That's us.
Charlotte has embraced us from day one. We're proud to be part of this city's food story, and we're not going anywhere.

IT STARTS WITH DE LA VEGA
Every taco, every cheese crisp, every quesadilla starts with a De La Vega tortilla. They're made the right way — with real ingredients, real technique, and real flavor.
We don't cut corners on the foundation. If the tortilla isn't right, nothing else matters.
